Uncategorized Add comments

I am 16 years old and i was recently diagnosed with type 1 diabetes and celiac disease about a week ago. I am having trouble keeping my blood sugar within the guidelines and i am also having trouble finding foods to eat. Please, I need help finding filling foods i can eat, and also foods i can snack on, I love snacking and i always use to prior to my diagnosis. I cannot eat foods with too much sugar or carbohydrates, and for the celiac disease i cannot eat any foods with gluten or made from wheat. Also please tell me anything else thats very vital or important to being diabetic or having celiac disease, health wise. I work out alot and i play many sports, but i want to know what i have to do to stay healthy and live a normal prosperous life. Thank you

you need to sit down with a dietitian and she/he will help you with this. As a new diabetic, your doctor should have ordered a consult with a dietitian since this is so important.
Also, you should have received a diet manual or some other reading material to help you.
About the snacking, all fresh fruits and veggies do not contain gluten and while you must limit the fresh fruit, you can nibble on vegetables to your hearts content. It is physically impossible to eat enough veggies to effect your blood sugar.
Any meat does not have gluten either and neither does rice.
Get on the phone and get a consult with a dietitian. That person can become your best friend in all this. use their skill and knowledge.

You have to discuss this with a dietician. Most endocrinologist office’s have a dietician or nutritionist on staff. Discuss this with your endocrinologist.
Also, you may only have to reduce gluten and wheat. You may not have to completely eliminate them.

First of all, see if the doctor that diagnosed you for diabetes and celiac disease can put you in touch with a nutritionist/dietician knowledgeable in what you need. Also contact the local chapter of csaceliacs.org and join their support group.

As you know, you have to keep your diabetes under control by using the right amount of insulin for the amount and type of food you are eating. For the celiac disease, you have to completely avoid gluten containing foods. Probably the place of commonality between the two diets is fresh or frozen vegetables, fresh or frozen non-processed beef, pork, chicken, fish, eggs and cheese. All fruits are OK for the celiac issue but probably the lower glycemic index fruits are better for the diabetic part and that would include the cantaloupe and other melons.

As a celiac, I take an omega 3-6-9 capsule and gluten free multivitamin and I would think that would help you as a diabetic too.

If your mother wants a cookbook or two that has great recipes that are low in carbohydrates and most but not all of the recipes are gluten free, then I recommend the George Stella cookbooks. He has 3 published and 1 more coming out in Feb/Mar.

Snacks will be where you need to be very careful. You can always eat carrots or cheese but I know that you will want normal snack foods once in a while. Try unflavored potato chips within the limits of your diabetes. Also Glutino makes a great gluten free pretzel and there are gluten free cookies, pasta, bread, pizza crusts and pizza in frozen food sections of Whole Foods. Here again they are fine for celiacs but you will have to limit them to stay in compliance of the diabetes part.
